How did the green screen work in the "Hello, Hello" sequence of "Fellini, Bergman and Partridge"? It seems a somewhat dark scene, since it's supposed to be taking place in a movie theater, but I don't see any shadows on the screen. How do they do that?

Speaking of screens, earlier in the movie, how do they make the portable screen tear up so well at Muldoon's Point?

It's an old Hollywood trick called "rear screen projection". A camera is set up behind the translucent movie screen and projected onto it. It is viewed from the front, where the Partridges are, almost making them seem as though they are in the moving image.

Nowadays they use a green screen for this effect. If you look closely, no one will be wearing green, because it gets blanked out when multiple images are combined.
